Yields: 12 cookies
- ½ cup unsalted butter, softened to room temperature
- ¼ cup Sweet Like Sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- ½ cup coconut flour
- ½ cup almond flour
- ½ teaspoon baking soda
- A pinch of salt
- ¼ cup pistachios, chopped coarsely
- ¼ cup chocolate chunks
Step 1: Preheat oven to 350*F. Line a baking sheet with a parchment paper and set aside.
Step 2: In a large bowl, using hand mixer, beat together unsalted butter, Sweet Like Sugar until creamy & fluffy.
Step 3: Further add eggs, one at a time, along with vanilla extract, mix until combined.
Step 4: Add the dry ingredients such as coconut flour, almond flour, baking soda and a pinch of salt. Beat until mixed together.
Step 5: Add in the chopped pistachios and chocolate chunks and fold to combine throughout the cookie dough.
Step 6: Scoop about 2 tablespoons of dough, roll into a ball between your palms. Place the rolled cookie dough onto the prepared baking sheet and slightly press with your fingers to flatten the dough for about ½ inch thickness.
Step 7: Transfer the baking sheet to oven and bake for about 10 – 15 minutes until slightly golden brown.
Step 8: Remove from oven and let it cool on the counter for 15 minutes.
Step 9: Store in an airtight container for up to 1 week.
