Keto Peanut Butter Mug Cake
1 tablespoon unsalted butter
3 tablespoons almond flour
2 tablespoons GOOD GOOD Sweet Like Sugar
1 large egg
2 tablespoons GOOD GOOD Peanut Butter - Crunchy, divided
½ teaspoon baking powder
¼ teaspoon vanilla extract
1 tablespoon mini chocolate chips
Serves 1 person
- In an 8 oz microwave-safe mug, melt the butter for 10 seconds. Add almond flour, Sweet Like Sugar, the egg, 1 tbsp of the Crunchy Peanut Butter, baking powder and vanilla extract.
- Mix using a whisk until everything is well combined before microwaving the mixture for 90 seconds, by then it should be well baked.
- In a small bowl, melt the remaining 1 tbsp of Peanut butter for 10 seconds in a microwave. Drizzle it over prepared mug cake, top with mini chocolate chips and serve with a spoon.
