Low carb scones with orange marmalade

Ingredients

¼ cup unsalted butter, room temperature

2 tablespoons sweet like syrup

¼ cup Good good orange marmalade

1 large egg, room temperature

½ teaspoon vanilla extract

2 ½ cups almond flour

1 teaspoon baking soda

A pinch of salt

For glazing and topping - 2 tablespoons orange marmalade

For glazing and topping - 2 tablespoons water

For glazing and topping - ¼ cup sliced almonds

Serves 3 – 4 servings

Preperation Time

10 minutes

In a large mixing bowl, cream together butter and sweet like syrup until fluffy. Add orange marmalade, mix until combined. Further add egg and vanilla extract, mix again.

Add the dry ingredients like almond flour, baking soda and salt. Mix until well combined without any lumps.

In a baking sheet, transfer the dough and form a round flat disc about 2 inch thickness. Refrigerate for 30 minutes.

Pre-heat the oven to 375* Fahrenheit.

Meanwhile prepare the glaze by mixing orange marmalade and water together in a small bowl, set aside.

Remove the dough after 30 minutes. Slice into 8 triangles and set them apart each other about 1 inch.

Brush the prepared glaze over the divided dough with a pastry brush and top with sliced almonds and press with fingers to adhere the almonds to the dough.

Bake for 12 – 14 minutes until it turns golden brown.

Let it cool on counter for 10 minutes and serve the scones with orange marmalade in a small bowl.
