Apricot Cobbler with No Added Sugar Jam

For the bars:
- 6 tbsp unsalted butter
- 1 cup all-purpose flour
- ¾ cup brown sugar
- 2 tsp baking powder
- 2 tsp cinnamon
- ½ tsp salt
- 1 cup milk
- 1 tbsp vanilla extract
- 1 12oz Jar or GOOD GOOD Apricot Jam
Instructions
- Preheat the oven to 350℉. Place butter in a 9” square baking pan and put it in the oven to melt (5 min)
- In a medium bowl, mix the flour, baking powder, cinnamon, brown sugar, and salt together. Set aside.
- Add milk and vanilla to the dries and mix until combined.
- Take the pan out of the oven with melted butter, add ¾ of the batter, followed by a jar of GOOD GOOD Apricot Jam (spread both to reach all sides of the pan), then dollop the remaining batter on top.
- Bake in the oven 35-45min or until the edges become dark brown and serve hot, topped with a scoop of ice cream for the ultimate flavor experience!
