Cinnamon Roll Pancakes with Apple Butter Swirl

Pancakes
- 1 cup all-purpose flour
- 1 cup coconut milk
- 1 tbsp coconut oil
- 1 tsp vanilla extract
- 2 tbsp baking powder
Apple Butter Swirl
- 3 tbsp GOOD GOOD Apple Butter (Amazon exclusive)
- 1 tsp cinnamon
Icing
- ¼ cup dairy-free cream cheese, softened
- 2 tbsp maple syrup
- 3 tbsp coconut milk
Instructions
- Whisk the pancake mix in a large bowl until ingredients are well combined and create a batter-like consistency. Set aside.
- Add GOOD GOOD Apple Butter and cinnamon to a small mixing bowl and whisk until well combined. Place the apple butter filling in a piping bag and cut a small hole at the bottom.
- Heat a large pan over medium heat. Once hot, add about 1 tbsp of oil. Scoop out the batter into the pan to create a medium-sized pancake, then immediately lower the heat and pipette the apple butter swirl into the pancake.
- Cook each pancake over medium/low heat for 5 minutes—one side only! This will prevent the apple butter from burning. Tip: Place the cooked pancakes on a plate and cover them with aluminum foil to preserve their warmth while the other pancakes cook.
- Meanwhile, make the icing by whisking the ingredients in a small bowl. When the pancakes are ready to serve, pour the icing over them and enjoy with a dollop of GOOD GOOD Apple Butter!
