Instructions
- Preheat oven to 350 degrees Fahrenheit.
Line 2 large baking sheets with parchment paper and set aside. - In a large bowl, mix all the ingredients such as pumpkin puree, creamy peanut butter, eggs and oats flour. Mix well until combined to a firm dough consistency.
- Transfer the dough to a lightly floured surface and roll the dough into a 1/4-inch-thick disc.
- Using a cookie cutter of desired shape, cut out your cookies and gently transfer them to the prepared baking sheet.
- Bake for about 10 mins, until the cookies are well baked. Transfer cookies on to a wire rack for further cooling.
- Store in an air-tight container for up to a week.
