Gluten Free and Dairy Free Chili Fig Newton Bar

Ingredients
- 2 jars GOOD GOOD Chili Fig Jam
- 1 ½ cup gluten-free flour
- ¾ cup coconut sugar
- ½ tsp baking powder
- ⅓ cup nut butter
- ⅓ cup coconut oil
- 4 tbsp dairy-free milk
- 2 tsp vanilla extract
- small pinch of salt
Instructions
- Preheat the oven to 350°F.
- Whisk the flour, coconut sugar, baking powder, and pinch of salt in a mixing bowl.
- Add the nut butter, coconut oil, and vanilla extract. Mix until a dough-like consistency forms. Add the almond milk and knead with your hands until the dough is cohesive.
- Press ⅔ of the dough on the bottom of an 8x8” baking dish lined with parchment paper. Bake for 15 minutes. Place the other ⅓ in the fridge to cool for about 10 minutes.
- Flatten the dough between two pieces of wax paper to form an 8x8” square and refrigerate for another 10 minutes.
- Spread the fig jam evenly over the bottom crust. Remove the crust from the fridge and carefully peel back one piece of the wax paper. Place the top crust over the fig jam layer and carefully remove the top piece of the wax paper.
- Bake for 25 minutes. Let the bars cool, then refrigerate for 3 hours.
- Slice into squares and enjoy!
