Ingredients

Loaf:

  • 1 ½ cups almond flour

  • ¼ cup coconut flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tbsp pumpkin pie spice

  • Pinch of salt

  • 2 large eggs

  • 2 egg whites

  • ½ cup GOOD GOOD Pumpkin Butter 🎃

  • ⅓ cup butter (browned or melted)

  • ⅓ cup granular monk fruit or erythritol sweetener (adjust to taste)

  • 1 tsp vanilla extract

Pumpkin Icing:

Instructions

  1. Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease.

  2. Mix dry ingredients: In one bowl, whisk almond flour, coconut flour, baking powder, baking soda, pumpkin spice, and salt.

  3. Mix wet ingredients: In another bowl, beat eggs and egg whites. Stir in GOOD GOOD Pumpkin Butter, melted butter, sweetener, and vanilla extract until smooth.

  4. Combine: Fold the dry mixture into the wet mixture. Batter should be thick but scoopable.

  5. Bake: Spread into loaf pan and bake for 40 minutes minutes, or until a toothpick comes out clean. Let cool completely.

  6. Make icing: Whisk together GOOD GOOD Pumpkin Butter, powdered sugar alternative, and milk until smooth and pourable.

  7. Assemble: Pour icing over cooled loaf, slice, and enjoy!
