Made with a combo of Greek yogurt, protein powder, coconut flour, and GOOD GOOD’s No Added Sugar Peach Jam, these cookies bring all the nostalgic comfort of peach cobbler—minus the sugar crash.

Ingredients (Makes 5 Cookies)

Cookie Dough:

  • ¼ cup coconut flour

  • ⅓ cup all-purpose flour

  • 1 tsp baking powder

  • ¼ cup monkfruit sweetener

  • 1 scoop protein powder (vanilla or unflavored works best)

  • ½ tsp cinnamon

  • 1 tsp vanilla extract

  • ¾ cup plain fat-free Greek yogurt

  • 1 egg

Filling:

Toppings:

  • 1 fresh peach, sliced (1 slice per cookie)

  • 5 tbsp chopped pecans (1 tbsp per cookie)

Icing Drizzle:

  • 2 tbsp powdered monkfruit sweetener

  • 1–2 tbsp milk of choice (we used unsweetened almond milk)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. Make the dough: In a large bowl, whisk together coconut flour, all-purpose flour, baking powder, cinnamon, and protein powder. Add the monkfruit sweetener and mix.

  3. Stir in Greek yogurt, egg, and vanilla extract until a thick dough forms. Let sit for 2–3 minutes to allow the coconut flour to absorb moisture.

  4. Scoop dough into 5 even portions. Flatten slightly and make a small well in the center of each cookie.

  5. Bake for 12–14 minutes or until edges are lightly golden. Allow to cool for 10 minutes.

  6. Add the filling: Spoon 2 tbsp of GOOD GOOD Peach Jam into the center of each cookie.

  7. Top it off: Press a fresh peach slice into the jam and sprinkle 1 tbsp of chopped pecans on top.

  8. Drizzle: Whisk together powdered monkfruit sweetener and milk until smooth. Drizzle over cooled cookies.
