Low Sugar Lemon Curd Dump Cake
We don’t think cutting back on sugar should mean giving up dessert. Especially not when you’ve got a jar (or two) of GOOD GOOD sugar-free Lemon Curd in the kitchen and a few minutes to spare.
This dump cake is everything you want in a weeknight dessert. It’s tart, creamy, buttery, and ridiculously easy to pull together. You don’t need a mixer, a crust, or even a plan. Just layer it all in a dish and bake.
Ingredients
- 2 jars GOOD GOOD Lemon Curd
- 8 oz cream cheese
- 1 egg
- 1/4 cup sugar alternative
- 1 box sugar-free yellow or vanilla cake mix
- 1 stick cold butter, cut into small pieces
Directions
- Preheat your oven to 350°F.
- In a bowl, mix the cream cheese, egg, and sugar alternative until smooth.
- Spread the lemon curd across the bottom of a greased baking dish.
- Dollop the cream cheese mixture over the curd and gently spread it.
- Sprinkle the dry cake mix evenly over the top.
- Add the cold butter pieces across the surface.
- Bake for about 40 to 45 minutes, or until the top is golden and bubbly at the edges. Let it cool slightly before digging in.
Tips
- Use a 9x13 baking dish for even layering.
- If you want a firmer texture, let it chill for an hour before serving.
- Pairs well with whipped cream or a scoop of low-sugar vanilla ice cream.
