Lemon Protein Truffles
Inspired by your go-to coffee shop pastry—but brighter, better, and no drive-thru required.
These rich, no-bake bites combine almond flour, protein powder, honey, and a burst of GOOD GOOD Lemon Curd for a soft, zesty center. Dipped in creamy GOOD GOOD Choco White and topped with lemon zest, they’re the perfect snack to stash in your fridge for a sweet, satisfying pick-me-up.
Dough Ingredients:
- 2 cups almond flour
- ½ cup oat flour
- 2 scoops protein powder
- zest of 2 lemons
- ¼ cup GOOD GOOD Lemon Curd
- 1/2 cup raw honey (or pure maple syrup)
- 1 tsp vanilla
- Glaze Ingredients:
- ¾ cup GOOD GOOD Choco White
Directions:
- Combine the dough ingredients in a food processor until well combined and sticks together.
- Roll into balls and place on a parchment lined baking sheet. Place in the fridge.
- Melt Choco White for 1 minute on 50% power.
- Coat the truffles with the Choco White and place them back on the baking sheet.
- Garnish each truffle with lemon zest.
- Freeze for 30 minutes and enjoy!
