Low Carb Peanut Butter and Jelly Power Bars


Ingredients:

  • 1 cup almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup chopped nuts
  • 1/2 cup GOOD GOOD Creamy PB
  • 1/3 cup GOOD GOOD Jam
  • 1/4 cup sugar-free sweetener
  • 1 teaspoon vanilla extract
  • A pinch of salt

Directions:

  1. Preheat your oven to 350°F and line a baking dish with parchment paper.
  2. In a large mixing bowl, combine almond flour, shredded coconut, chopped nuts, and an alternative sweetener.
  3. In a small saucepan, warm GOOD GOOD Peanut Butter, GOOD GOOD Jam, vanilla extract, and a pinch of salt over low heat. Stir until well combined and smooth.
  4. Pour the wet mixture over the dry ingredients in the mixing bowl. Mix thoroughly until everything is well coated.
  5. Transfer the mixture to the prepared baking dish, pressing it down firmly to create an even layer.
  6. Bake in the preheated oven for 15-20 minutes or until the edges turn golden brown.
  7. Allow the granola bars to cool completely before cutting into desired shapes
