Raspberry Vanilla Layer Cake

Ingredients
For the Cake:

2 cups almond flour

¼ cup coconut flour

1 tbsp baking powder

¼ tsp salt

4 large eggs

½ cup butter, melted
-
½ cup milk of choice (almond, dairy, etc.)

⅓ cup allulose (or preferred low glycemic sweetener)

2 tsp vanilla extract
For the Filling:

½ jar (about 6 oz) GOOD GOOD Raspberry Fruit Spread
For the Frosting:

8 oz cream cheese, softened

4 tbsp butter, softened
-
⅓ cup powdered alternative sugar

1 tsp vanilla extract
-
2–4 tbsp milk, as needed for texture
Instructions
Step 1: Bake the Cake

Preheat oven to 350°F (175°C). Grease and line two 6-inch cake pans with parchment paper.

In a bowl, whisk together almond flour, coconut flour, baking powder, and salt.

In another bowl, beat the eggs, melted butter, milk, sweetener, and vanilla extract until smooth.

Mix wet ingredients into dry until a smooth batter forms.

Divide evenly between the pans and smooth the tops.

Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

Cool completely on a wire rack.
Step 2: Make the Frosting

Beat cream cheese and butter until smooth.

Add powdered sweetener and vanilla extract. Beat until fluffy.

Add milk one tablespoon at a time until you reach your desired texture for piping.
Step 3: Assemble the Cake

Place one cake layer on a serving plate or cake stand.

Pipe or spread frosting in a ring around the edge (this keeps the fruit spread from spilling out).
