If you're craving a gorgeous layer cake that's sweet but won't send your blood sugar soaring, this one's for you. This Raspberry Vanilla Layer Cake looks bakery-worthy but is secretly low in sugar, gluten-free, and made with wholesome ingredients. Plus, that vibrant layer of GOOD GOOD Raspberry Fruit Spread brings all the tart-sweet flavor you love. Whether you're planning a celebration or just want a weekend baking project, this recipe is guaranteed to impress without the sugar crash.

Ingredients

For the Cake:

  • 2 cups almond flour

  • ¼ cup coconut flour

  • 1 tbsp baking powder

  • ¼ tsp salt

  • 4 large eggs

  • ½ cup butter, melted

  • ½ cup milk of choice (almond, dairy, etc.)

  • ⅓ cup allulose (or preferred low glycemic sweetener)

  • 2 tsp vanilla extract

For the Filling:

For the Frosting:

  • 8 oz cream cheese, softened

  • 4 tbsp butter, softened

  • ⅓ cup powdered alternative sugar

  • 1 tsp vanilla extract

  • 2–4 tbsp milk, as needed for texture

Instructions

Step 1: Bake the Cake

  1. Preheat oven to 350°F (175°C). Grease and line two 6-inch cake pans with parchment paper.

  2. In a bowl, whisk together almond flour, coconut flour, baking powder, and salt.

  3. In another bowl, beat the eggs, melted butter, milk, sweetener, and vanilla extract until smooth.

  4. Mix wet ingredients into dry until a smooth batter forms.

  5. Divide evenly between the pans and smooth the tops.

  6. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

  7. Cool completely on a wire rack.

Step 2: Make the Frosting

  1. Beat cream cheese and butter until smooth.

  2. Add powdered sweetener and vanilla extract. Beat until fluffy.

  3. Add milk one tablespoon at a time until you reach your desired texture for piping.

Step 3: Assemble the Cake

  1. Place one cake layer on a serving plate or cake stand.

  2. Pipe or spread frosting in a ring around the edge (this keeps the fruit spread from spilling out).

  3. Spread GOOD GOOD Raspberry Fruit Spread inside the frosting ring.

  4. Add the second cake layer. Repeat with frosting and another swirl of fruit spread.

  5. Pipe decorative dollops of frosting on top and garnish with fresh raspberries if desired.
