Scandinavian Fruit Tart with Raspberry Fruit Spread

Scandinavian Fruit Tart with Raspberry Fruit Spread

Scandinavian Fruit Tart with Raspberry Fruit Spread

There’s a kind of elegance in simplicity, and this tart leans all the way in. Inspired by traditional Scandinavian flavors and textures, it’s made with an almond flour crust, a light cream cheese filling, and GOOD GOOD Raspberry Fruit Spread. No added sugar, just real raspberries and balanced sweetness.

Each bite gives you buttery crunch, smooth filling, and a bright layer of fruit. The raspberry spread blends into the cream cheese mixture without overpowering it, giving just enough tartness to balance the richness. Fresh berries and mint on top make these feel extra special without requiring extra work.

The best part is that these can be made ahead and chilled, which makes them ideal for hosting or for a quiet afternoon treat that feels just a little elevated.

Ingredients for the crust

  • 2 and ½ cups almond flour
  • ¼ cup alternative sugar
  • ½ cup unsalted butter, melted
  • ¼ teaspoon vanilla extract

Ingredients for the filling

Ingredients for topping

  • 1 cup assorted berries
  • Fresh mint leaves

Instructions

  1. Preheat the oven to 350°F. Lightly grease six 4-inch mini tart pans with butter.
  2. In a bowl, stir together almond flour, alternative sugar, melted butter, and vanilla until crumbly.
  3. Press the mixture evenly into each tart pan to form a crust. Bake for 10 minutes or until lightly golden. Let cool completely.
  4. In another bowl, use a hand mixer to beat the cream cheese or mascarpone with the sweetener and raspberry fruit spread until smooth and fluffy.
  5. Add the heavy cream and vanilla, then beat again until fully combined and creamy.
  6. Spoon about 3 tablespoons of filling into each tart crust.
  7. Top with fresh berries and a few mint leaves.
  8. Refrigerate for at least one hour before serving.

These little tarts are sweet without being sugary, simple without being boring, and creamy without being heavy. They feel like something you’d pick up from a café window on a Scandinavian side street. And now you don’t have to travel to enjoy one. You just need a jar of GOOD GOOD Raspberry Fruit Spread and a few minutes in the kitchen.
