Summer Fruit Layer Cake
Ingredients:
Cake:
- 1 ½ cups almond flour
- 2 tsp baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter
- 1 cup granulated sweetener of choice
- 2 eggs
- ½ cup neutral oil
- 1 tsp vanilla extract
- Filling:
- ½ cup - 1 cup GOOD GOOD Forest Fruits Jam
- 2 cups heavy whipping cream
- ⅓ cup granulated sweetener of choice
- 1 tsp vanilla extract
- 1 ½ cups fresh fruit (strawberries, blueberries, peaches)
Directions:
Making the cake:
- Preheat the oven to 350 degrees F°.
- Butter or spray 3 4-inch pans with parchment/baking paper and set aside.
- In a mixing bowl, add dry ingredients and mix until well combined. Set aside.
- Add the eggs in, one at a time, and mix well until fully incorporated. Add the melted butter, oil, sugar and vanilla extract until combined.
- Divide the batter evenly amongst the 3 pans. Bake for around 18-20 minutes, or until a skewer comes out clean. Allow the cakes to cool.
- In a cold bowl whip heavy cream, sugar and vanilla until medium firm peaks.
- Spread a layer of GOOD GOOD Forest Fruits Jam, whipped cream and then cover with fruit.
- Top with a cake layer and another layer of jam, cream and fruit.
- Place the last cake layer on top. Add jam, cream and top with remaining fruit. Sprinkle cake with powdered sugar.
